Asparagus Milanese




What you need:


1 bundle fresh asparagus (washed and ends snapped)
salt and pepper
1 tbsp olive oil
1 egg (over easy)
1/4 cup grated parmesan cheese




Boil asparagus in salted water for 5 minutes.  Cook egg over easy and set to side.  In a pan add olive oil, asparagus, salt and pepper. Cook on high heat for 2 minutes. Place asparagus on plate. Lay egg over asparagus and sprinkle cheese over the top.
